In the last 6 months we have had two of our staff retire. Our search for replacements generated a flood of applications, the sign of a great place to work and great guests to take care of as well. We were fortunate to have 2 new employees join the Casa Carole family from the prestigious Casa Guillermo just down the coast, where they charge $2,000 a night.

Beautiful Breakfasts To Greet The Day

Mari, our new cook brings a wealth of culinary knowledge and experience to Casa Carole, along with her infectious smile. She has developed an extensive gourmet menu featuring truly traditional Mexican dishes and international cuisine. She can prepare eggs at least 6 ways, such as huevos ranchero, huevos Mexicana or huevos Benedict. Or you can opt for fluffy banana pancakes incorporating real bananas and lots of banana liqueur! But our guests this summer have voted the new Casa Carole French Toast as "The best we have ever had!" Pepe, our new houseman/concierge helps by squeezing fresh juice orange juice and prepares a platter of in-season fresh fruit, including, mango, papaya, kiwi, strawberries and 2 kinds of melon.

There are so many things to do in Vallarta. Pepe will be your personal and enthusiastic concierge. He knows the best programs and the best deals. He can help you to plan your week with reservations and arrangements for boat rides down the coast to swim with the fish, deep sea fishing, snorkeling and scuba trips, zip line or ATV adventures in the jungle, a visit to the Zoo or the Botanical Garden. Then he can help you arrange for all the sports; golf on 6 courses, tennis, or a visit to a local gym. Or he can arrange for a professional masseur to come to the villa and sooth your cares away.

Meal Prep and House Maintenance

As well as serving breakfast and event planning Pepe is responsible for maintenance, repairs and painting that usually keep him busy until noon. In the morning Mari preps the dinner for the evening. Our staff generally goes home at noon to return at 4 pm.

Late Afternoon On The Pool Deck

Upon his return, Pepe prepares outstanding Margaritas; lime, mango or strawberry, or pina coladas, plus "Happy Drinks" for the kids. He serves them on the pool deck along with tostadas and guacamole. Or you can ask Mari for a selection of her hot and cold hors doeuvres to be served on the pool deck with Pepe's drinks. Carol recommends the coconut shrimp. It's the stuffed mushrooms for me. But plan for a light dinner or you will be stuffed. Pepe then sets the table while Mari cooks the gourmet meal you have selected from her new menu.

Dining Is Special At Casa Carole

Dinner usually starts with fresh warm cheese bread and the salad you have chosen from Mari's unique selection, such as, Tropical Salad, California Salad , Asparagus Salad or Cesar or mixed. As for entrées, Mari now has 21 to choose from. In November, we especially enjoyed the spare ribs that just melted off the bones and the rock lobster with lemon butter. Other seafood options included fresh red snapper (caught each day by the fishermen right in front of the villa) lightly breaded or an easy-to-fillet whole red snapper - if you don't mind it staring at you accusingly from your plate!

For vegetables we especially enjoyed the green beans, bunched and wrapped in bacon, marinated in soy sauce, topped with butter and then grilled for 15 minutes. We also enjoyed fresh asparagus, carrots and more unique things like Chayote, a kind of squash. For dessert, among other selections, there was fabulous flan (Mexico's national desert) apple crisp with ice cream, or Key lime pie to die for. All of these delectable delights were served by Pepe, who pours the wine you have selected and then takes your order for the meals you will have the next day. If you wish, he can serve coffee and liqueurs on the dining room balcony to top off a fantastic day. After dinner, Mari will present the receipts for the food and drink you have ordered to make these gourmet drinks and meals. The costs are surprisingly low. The daily cost for breakfast, drinks by the pool and a 4-course dinner with wine for 8 adults ranged between 1,400 and 2,000 pesos. That's from $120 to $190 per day, or about $15 to $25 per person. This is about half the per-person cost at the equivalent five-star restaurants in town. It's no wonder that most of our clients have almost all of their meals at the villa.
